Description

This super simple 5-minute Easy Vegan Tzatziki Sauce is based on six ingredients, including vegan cultured yogurt, cucumbers, garlic, herbs, and lemon. Serve it with pita, tabouleh, or falafels.


  • 1 cup plain, unsweetened vegan cultured yogurt (i.e., soy, almond, coconut)
  • ½ small lemon, juiced
  • ½ small cucumber, peeled, shaved
  • 1 clove garlic, finely minced
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint
  • Pinch salt (optional)


  1. Mix together yogurt, lemon juice, cucumber, garlic, parsley, mint, salt (optional), and black pepper in a small bowl.
  2. Chill in an airtight container until serving time.
  3. Makes six 1/4-cup servings (or about 1 ½ cups total). Lasts about 3 days in the refrigerator.

Notes

Use a mandolin to shave the cucumber.
