This smoothie utilizes produce food scraps, such as radish, beet, or carrot tops; broccoli or cauliflower leaves; carrot and beet peels; and tough broccoli or kale stems. Description

Use those food scraps to reduce food waste! Put kitchen produce scraps to good use in this Compost Green Goddess Smoothie, which is the perfect healthy, budget-friendly, gluten-free, vegan smoothie recipe to help cut your environmental footprint.


  • 1 cup leafy greens (i.e., beet or radish tops, broccoli or cauliflower leaves)
  • 1 cup vegetable scraps (i.e., carrot or beet peels, broccoli stems, kale stems)
  • 1 cup fruit (i.e., bananas, berries, peaches, nectarines, citrus—may use fruit peels)
  • 2 tablespoons hemp or flax seeds
  • 1 cup plant-based milk, plain, unsweetened (i.e., soy, oat, or almond)


Instructions

  1. Place leafy greens, vegetables scraps, fruit, hemp or flax seeds, and plant-based milk in container of a small blender.
  2. Process about 2 minutes, until smooth and creamy.
  3. Pour into two large glasses (about 1 ½ cups per glass) and serve immediately.
  4. May store in sealed Mason jars for up to 5 days in the refrigerator.
